Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 large roasted sweet potatoes, peeled and mashed (approx. 2 cups)
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/4 cup pure maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 4 oz cream cheese, softened
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, mix 1 1/2 cups flour, 1/2 cup melted butter, and 1/4 cup sugar until it resembles coarse crumbs.
  3. Press the crust mixture firmly and evenly into the bottom of the prepared baking dish.
  4. Bake the crust for 10 minutes until lightly golden. Remove from oven and set aside.
  5. In a large bowl, combine mashed sweet potatoes, 3/4 cup granulated sugar, eggs, maple syrup, bourbon, 1 teaspoon vanilla, cinnamon, ginger, nutmeg, and salt. Whisk until smooth.
  6. Pour the sweet potato filling over the pre-baked crust.
  7. In a separate small bowl, beat cream cheese, 1/4 cup brown sugar, and 1 teaspoon vanilla until smooth.
  8. Drop spoonfuls of the cream cheese mixture over the filling and swirl gently with a knife to create a marbled effect.
  9. Bake for 35-40 minutes until the center is set and edges are slightly golden.
  10. Cool completely in the pan on a wire rack before lifting out and cutting into squares.

Notes

Roasting sweet potatoes concentrates their flavor and removes excess moisture compared to boiling. Ensure bars cool completely to set properly. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use vegan butter and cream cheese. Alcohol evaporates during baking, leaving only flavor.
