loaded baked potato soup - featured image

A rich and hearty soup made with russet potatoes, smoky bacon, and sharp cheddar cheese. This comfort food classic is thickened naturally with mashed potatoes and finished with a creamy cheese sauce.

Ingredients

Scale
  • 12 slices thick-cut bacon, chopped
  • 1/2 cup unsalted butter
  • 2 medium yellow onions, diced
  • 4 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 4 cups chicken broth (low-sodium)
  • 1 cup heavy cream
  • 3 large russet potatoes, peeled and cubed
  • Salt and black pepper to taste
  • 2 cups sharp cheddar cheese, shredded
  • 4 stalks green onions, sliced
  • 1/2 cup sour cream

Instructions

  1. Cook chopped bacon in a large pot over medium heat until crispy (8-10 minutes). Remove bacon with tongs, leaving 2 tablespoons of fat in the pot.
  2. Add butter to the bacon fat. Once melted, add diced onions and cook for 5-7 minutes until soft and translucent.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Sprinkle flour over the onions and butter. Stir constantly for 2 minutes to create a roux.
  5. Slowly whisk in chicken broth to prevent lumps. Stir in heavy cream and bring to a gentle simmer.
  6. Add cubed potatoes, salt, and pepper. Simmer for 15-20 minutes until potatoes are fork-tender.
  7. Mash about half of the potatoes directly in the pot to thicken the soup. Leave the rest chunky.
  8. Reduce heat to low. Gradually stir in shredded cheddar cheese until melted and smooth.
  9. Taste and adjust seasoning. Ladle into bowls and top with reserved bacon, green onions, and sour cream.

Notes

For a gluten-free version, swap all-purpose flour for a 1:1 gluten-free blend or cornstarch. To prevent cheese clumping, add cheese on low heat and stir gradually. If the soup is too thick, add more broth or cream. Leftovers keep well in the fridge for up to 4 days.
