A comforting, creamy soup made from roasted honeynut squash, enriched with warm spices and topped with crunchy toasted walnuts. This easy-to-make dish is perfect for fall dinners and comes together in under 45 minutes.

Ingredients

Scale
  • 2 medium honeynut squashes, halved and seeded
  • 2 tablespoons unsalted butter (or olive oil for dairy-free)
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth (low-sodium recommended)
  • 1/2 cup heavy cream (or coconut milk for dairy-free)
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste
  • 1/2 cup walnuts, roughly chopped
  • 1 teaspoon extra virgin olive oil (for drizzling)
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons pumpkin seeds (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or foil.
  2. Cut honeynut squash in half lengthwise and scoop out seeds. Place halves cut-side down on the prepared baking sheet.
  3. Roast squash for 25-30 minutes until tender and edges are caramelized.
  4. While squash roasts, melt butter in a large pot over medium heat. Add onion and cook for 5 minutes until softened.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Scoop squash flesh from skins and add to the pot with onions. Pour in vegetable broth.
  7. Add ground ginger, nutmeg, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes.
  8. Remove from heat and blend soup until smooth using an immersion blender or countertop blender.
  9. Stir in heavy cream (if using) and blend again to incorporate.
  10. In a small skillet over medium heat, toast walnuts for 3-5 minutes until fragrant and lightly browned. Let cool.
  11. Ladle soup into bowls and top with toasted walnuts, fresh thyme leaves, a drizzle of olive oil, and pumpkin seeds if desired.

Notes

Roasting the squash is crucial for developing deep flavor and caramelization. Toast walnuts separately to maintain crunch. Use low-sodium broth to control salt levels. The soup tastes even better the next day as flavors meld. Can be made dairy-free by swapping butter for oil and cream for coconut milk.
