  • 4 boneless pork chops (about 1-inch thick)
  • Salt and pepper, to season
  • 2 tablespoons olive oil or butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream (240 ml)
  • 1 cup grated Parmesan cheese (about 90 grams)
  • 1/2 cup chicken broth (120 ml), low-sodium preferred
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Pat the pork chops dry with paper towels and season both sides generously with salt and pepper. (5 minutes)
  2. Place a skillet over medium-high heat and add 1 tablespoon of olive oil or butter. Once hot, add the pork chops. (2 minutes)
  3. Cook pork chops for 4-5 minutes on each side until golden brown and cooked through (internal temp 145°F / 63°C). Transfer to a plate and tent with foil. (10 minutes)
  4. Lower heat to medium and add remaining 1 tablespoon butter. Add minced garlic and sauté for 30-45 seconds until fragrant but not browned. (1 minute)
  5. Pour in chicken broth and scrape browned bits from pan. Simmer for 2 minutes to reduce slightly. (2 minutes)
  6. Slowly whisk in heavy cream and grated Parmesan cheese. Add Dijon mustard and stir until sauce thickens and cheese melts, about 3-4 minutes. (4 minutes)
  7. Return pork chops to skillet, spoon sauce over them, and warm together for 2-3 minutes. (3 minutes)
  8. Taste sauce and adjust seasoning with salt, pepper, and optional lemon juice. Sprinkle chopped parsley on top and serve immediately. (2 minutes)

Notes

If sauce gets too thick, add a splash more chicken broth or cream to loosen it. Rest pork chops before making sauce to keep them juicy. Use freshly grated Parmesan for best flavor and texture. Bone-in pork chops can be used but require longer cooking time. For dairy-free, substitute heavy cream with coconut cream and Parmesan with dairy-free alternatives.
