Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 ½ cups graham cracker crumbs, 6 tablespoons melted butter, 2 tablespoons sugar, and a pinch of salt. Stir until the mixture resembles wet sand.
  2. Transfer the crust mixture into the 8×8-inch pan. Press firmly and evenly into the bottom using the back of a spoon or the bottom of a glass. Bake for 8-10 minutes until golden and fragrant. Remove and let cool completely while you prepare the filling.
  3. In a food processor or blender, add the peeled and chopped peaches and puree until smooth (about 30-45 seconds). Scrape down the sides if needed.
  4. Add softened cream cheese, Greek yogurt, sugar, lemon juice, vanilla extract, and lemon zest (if using) to the peaches. Blend again for 1-2 minutes until fully combined and silky smooth. Taste and adjust sweetness or lemon juice as desired.
  5. Pour the creamy peach lemonade filling over the cooled graham cracker crust. Smooth the top with a spatula. Cover tightly with plastic wrap or parchment paper, pressing gently to avoid air pockets.
  6. Place in the freezer for at least 4 hours or overnight until fully set and firm.
  7. Remove from the freezer 10 minutes before slicing to soften slightly for clean cuts. Use a sharp knife warmed under hot water for best results.
