A stress-free, slow-cooker mashed potato recipe that yields silky, fluffy results perfect for feeding a crowd during Friendsgiving or holiday gatherings.

Ingredients

Scale
  • 5 pounds Yukon Gold potatoes, peeled and cut into 1.5-inch chunks
  • 1/2 cup unsalted butter, cubed
  • 1 cup heavy cream, cold
  • 1/2 cup sour cream, room temperature
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 2 teaspoons kosher salt, or to taste
  • 1/2 teaspoon freshly cracked black pepper
  • 2 tablespoons fresh chives, chopped (for garnish)

Instructions

  1. Peel potatoes and cut into uniform 1.5-inch chunks. Place in a bowl and cover with cold water to prevent browning and remove excess starch.
  2. Melt butter in a small skillet over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant but not browned. Remove from heat.
  3. Drain potatoes well and place them in a 6-quart slow cooker. Pour in chicken broth.
  4. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until potatoes are tender and a fork slides in with zero resistance.
  5. Drain potatoes and return them to the slow cooker pot. Let sit for a minute to allow excess steam to escape.
  6. Add the sautéed garlic butter to the hot potatoes. Using an electric hand mixer, begin mixing on low speed, gradually increasing to medium-high.
  7. Add the cold heavy cream and sour cream. Whip until smooth and fluffy.
  8. Taste and add salt and pepper as needed. Garnish with fresh chives and serve immediately.

Notes

Use Yukon Gold potatoes for the best creamy texture. Do not skip sautéing the garlic to avoid harsh raw flavor. Cold cream is essential for creating a fluffy, emulsified texture. If holding for later, keep on the ‘Warm’ setting and cover tightly to prevent drying out. Do not freeze as texture may become grainy.
