  • 1/2 cup chicken broth

Instructions

  1. Pat chicken breasts dry and season both sides with salt, pepper, and Italian seasoning.
  2. Optional: In a skillet, heat olive oil over medium heat. Add minced garlic and sun-dried tomatoes and sauté for 2-3 minutes until fragrant.
  3. In a mixing bowl, whisk together heavy cream and softened cream cheese until smooth.
  4. Place seasoned chicken breasts in the slow cooker. Pour sautéed garlic and sun-dried tomatoes over the chicken (or add raw if skipping sauté).
  5. Add chicken broth, then pour the cream and cream cheese mixture over everything.
  6. Cover and cook on low for 4-5 hours until chicken is tender and cooked through (internal temperature 165°F).
  7. About 10 minutes before serving, stir in fresh spinach and grated Parmesan cheese. Allow spinach to wilt gently.
  8. Taste and adjust seasoning with salt and pepper. If sauce is too thin, mix cornstarch with cold water and stir in, cooking for another 5-10 minutes until thickened.
  9. Serve hot over your favorite sides.
