A comforting, easy-to-make slow cooker soup that captures the rich flavors of lasagna without the complex assembly. Perfect for busy weeknights, this dish combines ground beef, noodles, and a creamy tomato base topped with ricotta and mozzarella.

  • 1 lb ground beef (80/20 lean preferred)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 12 oz dry lasagna noodles, broken into pieces
  • 1 (28 oz) can crushed tomatoes
  • 1 (6 oz) can tomato paste
  • 1 packet dry lasagna seasoning (or 2 tsp dried basil, 1 tsp oregano, 1/2 tsp Italian seasoning)
  • 1 (32 oz) carton low-sodium chicken broth
  • 1 (15 oz) container whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup heavy cream
  • 1 egg (for ricotta mixture)
  • 1 tsp Italian seasoning (for ricotta mixture)
  • Fresh basil leaves, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat for 5-7 minutes. Drain excess fat if desired.
  2. In the same skillet, sauté the diced onion for 2-3 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant.
  3. Transfer the meat and onion mixture to a 6-quart slow cooker. Add crushed tomatoes, tomato paste, lasagna seasoning, and chicken broth. Stir until tomato paste is dissolved.
  4. Add the broken dry lasagna noodles to the slow cooker and stir gently to submerge them in the liquid.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until noodles are tender.
  6. While soup cooks, mix ricotta cheese, egg, half of the mozzarella, and 1 tsp Italian seasoning in a bowl until smooth.
  7. Once noodles are tender, stir in heavy cream. Taste and add salt and pepper as needed.
  8. Ladle soup into bowls. Top with dollops of the ricotta mixture and remaining mozzarella. Garnish with fresh basil.

Notes

For best texture, ensure noodles are fully submerged. If using no-boil noodles, check earlier as they may become mushy. The soup thickens in the fridge; add broth when reheating. Dairy components may separate if frozen; freeze base without cream/ricotta for best results.
