Instructions

  1. Shred about 5 cups of green cabbage into thin, even strips. Peel and julienne or shred 1 cup of carrots, then thinly slice 1/4 cup of red onion. Toss these into a large mixing bowl.
  2. In a medium bowl, whisk together 1/4 cup apple cider vinegar, 1/2 cup mayonnaise, 2 tablespoons granulated sugar, 1 teaspoon Dijon mustard, 1/2 teaspoon celery seed, 1 teaspoon salt, and 1/4 teaspoon freshly ground black pepper until smooth and creamy.
  3. Pour the dressing over the shredded vegetables. Using tongs or two large spoons, toss gently but thoroughly to coat everything evenly without bruising the cabbage.
