  • Sliced apples or pears for serving
  • Optional: dried figs or fresh grapes for serving

Instructions

  1. Make the candied walnuts: Place a small skillet over medium heat. Add the butter and let it melt completely. Once melted, add the honey and stir to combine. Let it bubble for about 30 seconds, then add the walnut halves. Stir constantly for 2-3 minutes until the walnuts are coated and the honey mixture starts to caramelize. Sprinkle with a pinch of sea salt and cinnamon if using. Spread the walnuts on a piece of parchment paper to cool.
  2. Preheat and prep the brie: Preheat your oven to 350°F (175°C). Using a sharp knife, score the top rind of the brie in a crosshatch pattern about 1/4 inch deep. Place the brie in a small baking dish or on a parchment-lined baking sheet.
  3. Assemble and bake: Drizzle 2 tablespoons of honey over the top of the scored brie. Sprinkle fresh thyme leaves if using. Bake for 12-15 minutes, until the brie is puffed slightly and feels jiggly when you gently shake the dish.
  4. Top and serve: Carefully transfer the baked brie to a serving platter. Top with the candied walnuts, breaking them into smaller pieces if desired. Drizzle with an extra tablespoon of honey and finish with a pinch of flaky sea salt. Serve immediately while warm and oozy.

Notes

Do not overbake the brie or it will turn into a puddle. Let the brie come to room temperature for 20-30 minutes before baking for even heating. Score the rind rather than removing it for best texture. The candied walnuts can be made up to a week ahead and stored in an airtight container. Baked brie does not store well; serve immediately.
