A quick, no-cook breakfast that transforms into a pudding-like consistency overnight. This high-protein, creamy oatmeal is perfect for meal prep and provides steady energy without a sugar crash.

Ingredients

Scale
  • 1/2 cup Old-Fashioned Rolled Oats
  • 1 tablespoon Chia Seeds
  • 1 scoop (approx. 30g) Vanilla Protein Powder
  • 3/4 cup Milk of Choice (dairy, almond, oat, or soy)
  • 1 tablespoon Creamy Peanut Butter
  • 1 teaspoon Maple Syrup or Honey (optional)
  • 1/4 cup Greek Yogurt (optional, for extra creaminess)
  • Pinch of Salt

Instructions

  1. Prep clean, dry mason jars or airtight containers.
  2. Add dry ingredients to each jar: 1/2 cup rolled oats, 1 tablespoon chia seeds, and 1 scoop protein powder. Shake gently to distribute.
  3. Pour in 3/4 cup milk. If using, add 1/4 cup Greek yogurt, 1 tablespoon peanut butter, 1 teaspoon sweetener, and a pinch of salt.
  4. Stir thoroughly with a spoon or whisk until the mixture is uniform and creamy, ensuring no clumps of protein powder remain.
  5. Seal the jars tightly and give them a good shake.
  6. Refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  7. Serve cold directly from the fridge, or microwave for 30-60 seconds if preferred warm. Top with fresh fruit or cinnamon before eating.

Notes

Do not use steel-cut oats as they will not soften enough. Old-fashioned rolled oats are required. If using casein protein powder, it absorbs more liquid, so you may need to add extra milk in the morning. Add fresh fruit toppings right before eating to prevent browning.
