This creamy, comforting white chicken chili is made effortlessly in the slow cooker with tender chicken, white beans, and a luscious broth. Perfect for busy weeknights or cozy weekends, it’s a crowd-pleaser that’s both hearty and light.

Ingredients

Scale
  • 1.5 pounds boneless skinless chicken thighs
  • 2 cans (15 oz each) white beans (Great Northern or cannellini), drained and rinsed
  • 4 cups low sodium chicken broth
  • 2 cans (4 oz each) diced green chiles
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • Salt and black pepper to taste (start with 1 teaspoon salt and ½ teaspoon pepper)
  • 4 ounces cream cheese, softened
  • ¼ cup fresh cilantro, chopped (for garnish)
  • Juice of 1 lime
  • Optional toppings: diced avocado, shredded Monterey Jack cheese, sour cream, crushed tortilla chips, sliced jalapeños

Instructions

  1. Prep the aromatics: Dice the onion and mince the garlic.
  2. Layer the ingredients: Place the chicken thighs in the bottom of the slow cooker. Add the diced onion, minced garlic, and both cans of green chiles on top.
  3. Add the beans and spices: Drain and rinse the white beans, then add them to the pot. Sprinkle the cumin, oregano, chili powder, salt, and pepper over everything. Pour in the chicken broth, making sure the chicken is mostly submerged. Give everything a gentle stir.
  4. Cook low and slow: Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is fork-tender.
  5. Shred the chicken: Remove the chicken to a cutting board or large bowl. Use two forks to shred it into bite-sized pieces. Return the shredded chicken to the slow cooker.
  6. Thicken the chili: Scoop out about 1 cup of the beans and a little broth from the pot. Blend until smooth using an immersion blender or regular blender, then stir the puree back into the chili.
  7. Add the cream cheese: Cut the softened cream cheese into small cubes and stir them into the hot chili. Stir occasionally until fully incorporated.
  8. Finish with freshness: Squeeze the lime juice into the chili and stir. Taste and adjust salt and pepper.
  9. Serve and garnish: Ladle the chili into bowls and top with fresh cilantro, diced avocado, shredded cheese, or other desired toppings.

Notes

For best results, cook on LOW for the full 7 hours to deepen flavors. Let cream cheese sit at room temperature for 20 minutes before adding to prevent clumping. Season at the end to avoid oversalting. The chili thickens as it sits and tastes even better the next day.
