A comforting, healthy slow cooker soup featuring lean turkey, chewy wild rice, and aromatic herbs. This easy meal prep-friendly dish delivers deep flavor with minimal active prep time.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, finely diced
  • 2 medium carrots, peeled and diced into small half-moons
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 3 cups cooked turkey, shredded or diced
  • 1 cup wild rice blend (dry)
  • 6 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1/2 teaspoon freshly cracked black pepper
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions

  1. Heat butter in a large skillet over medium heat. Add diced onion, carrots, and celery. Cook for 5-6 minutes until onions are translucent and carrots soften. Add minced garlic in the last minute and cook until fragrant.
  2. Transfer the sautéed vegetable mixture into a 6-quart slow cooker insert. Add the dry wild rice blend, dried thyme, bay leaves, and black pepper. Stir to combine.
  3. Pour in the low-sodium chicken broth and stir well to ensure no rice is stuck to the bottom. Add the shredded turkey.
  4. Cover and cook on LOW for 6-7 hours (or HIGH for 3-4 hours).
  5. About 30 minutes before serving, check the rice for tenderness. If needed, add 1/2 cup water and cook longer. Taste and adjust salt and pepper.
  6. Remove bay leaves. Stir in fresh parsley and lemon juice. Serve hot.

Notes

Sautéing the vegetables first builds deeper flavor than adding them raw. If using rotisserie chicken, add it in the last hour to prevent mushiness. The soup thickens as it sits; add broth when reheating. Wild rice is naturally gluten-free, but check broth labels.
