A comforting fall dinner featuring tender roasted acorn squash filled with a sweet and spiced maple brown sugar topping, finished with toasted pecans.

  • 2 medium acorn squash
  • 2 tablespoons unsalted butter, melted
  • 3 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup crushed pecans, toasted
  • 1 tablespoon chopped fresh parsley, optional
  • 1/4 cup water

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Wash and dry the acorn squash. Cut in half lengthwise and scoop out seeds and fibers.
  3. Prick the flesh of the squash halves with a fork to allow steam to escape.
  4. In a small bowl, mix brown sugar, cinnamon, ginger, and salt.
  5. In another bowl, whisk melted butter, maple syrup, and vanilla extract.
  6. Place squash halves cut-side up in a 9×13 inch baking dish. Brush flesh with the butter-maple mixture.
  7. Sprinkle the brown sugar mixture generously over each half, ensuring it gets into crevices. Top with toasted pecans.
  8. Pour 1/4 cup water into the bottom of the baking dish.
  9. Cover tightly with aluminum foil and bake for 45 minutes.
  10. Remove foil and bake for another 15-20 minutes until the topping is golden brown and squash is tender.
  11. Check doneness by piercing with a fork; it should slide in easily.
  12. Garnish with parsley if using, let cool for 5 minutes, and serve.

Notes

If the squash is hard to cut, microwave the whole squash for 2 minutes first. Toast pecans in a dry pan for 2-3 minutes before adding. If the topping browns too quickly, cover loosely with foil. For dairy-free, swap butter for coconut oil or vegan butter.
