A quick and comforting winter drink that emulsifies butter, brown sugar, and spices into a creamy base before adding hot water and rum for a silky, spiced experience.

Ingredients

Scale
  • 1/2 cup dark brown sugar
  • 1/2 cup unsalted butter, softened to room temperature
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 6–8 oz boiling water
  • 1.5–2 oz dark or spiced rum
  • Whipped cream (optional, for topping)

Instructions

  1. In a small bowl or directly in a heat-proof mug, combine the softened unsalted butter and dark brown sugar.
  2. Whisk or froth vigorously until the mixture forms a smooth, pale paste.
  3. Add the ground cinnamon, nutmeg, and cloves to the butter-sugar mixture and whisk to combine into a fragrant paste.
  4. Boil water (about 6-8 ounces per serving).
  5. Pour the boiling water directly over the butter-sugar-spice mixture in the mug.
  6. Let it sit for 30 seconds to melt the butter, then whisk vigorously again until the mixture becomes a cloudy, opaque emulsion with no clumps.
  7. Stir in the dark or spiced rum (1.5-2 oz per mug) and taste to adjust strength if needed.
  8. Top with whipped cream if desired and serve immediately while steaming hot.

Notes

The key to this recipe is emulsifying the butter with the sugar and spices before adding the hot water to prevent a greasy layer on top. Use room temperature butter for easier mixing. Serve immediately as the drink will separate as it cools. The butter-sugar-spice paste can be stored in an airtight container in the fridge for up to two weeks.
