A creamy, comforting pumpkin hot chocolate made in a slow cooker with simple ingredients like pumpkin puree, milk, cream, and warm spices, topped with melted marshmallows.

Ingredients

Scale
  • 15 oz can 100% pure pumpkin puree
  • 4 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup marshmallows
  • Whipped cream (optional)

Instructions

  1. Ensure your slow cooker is clean and dry.
  2. In a medium bowl, whisk together granulated sugar, ground cinnamon, ground ginger, nutmeg, and salt.
  3. Add the pumpkin puree to the spice mixture and stir until fully coated and smooth.
  4. Pour the whole milk and heavy cream into the slow cooker, then add the vanilla extract.
  5. Add the pumpkin-spice paste to the slow cooker and stir well to incorporate everything.
  6. Cover and cook on low for 2 to 3 hours (or high for 1 to 1.5 hours).
  7. Stir the mixture about 30 minutes before serving and check temperature; it should be hot but not boiling.
  8. Ladle into mugs and top with marshmallows to melt slightly from the heat.

Notes

Use 100% pure pumpkin puree, not pumpkin pie filling. For a dairy-free version, substitute milk and cream with full-fat coconut milk. Toasting spices lightly before adding can enhance flavor. Do not let the mixture boil to prevent curdling.
