A comforting, creamy soup that captures the flavors of classic lasagna without the hassle of layering noodles. This easy-to-make dish uses ricotta cheese whisked into the broth for a rich, cloud-like texture.

Ingredients

Scale
  • 2 tablespoons extra virgin olive oil
  • 1 pound lean ground beef (90/10)
  • 1 pound mild or hot Italian sausage, casings removed
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (6 oz) tomato paste
  • 2 cans (28 oz each) crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 2 teaspoons dried Italian seasoning
  • Salt and pepper to taste
  • 12 ounces rotini or short pasta
  • 15 ounces whole milk ricotta cheese
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and Italian sausage, breaking it up with a wooden spoon. Cook until browned (8-10 minutes), then drain excess fat if necessary.
  2. Add diced onion to the meat and sauté for 3-4 minutes until translucent. Add minced garlic and stir for 30 seconds until fragrant.
  3. Stir in tomato paste and cook with the meat and veggies for 1 minute to caramelize slightly. Pour in crushed tomatoes and chicken broth, scraping the bottom of the pot to release browned bits. Bring to a boil.
  4. Reduce heat to low. Stir in Italian seasoning, salt, and pepper. Simmer uncovered for 20 minutes to allow flavors to meld and sauce to thicken.
  5. While the sauce simmers, boil rotini pasta in salted water according to package directions until al dente. Drain and set aside.
  6. In a separate small bowl, whisk ricotta cheese with a few tablespoons of hot soup broth to temper it. Stir in heavy cream and Parmesan cheese until smooth.
  7. Turn off the heat from the soup. Slowly stir in the ricotta mixture. Do not boil after adding dairy to prevent curdling. Stir gently to create marbled swirls.
  8. Add the cooked pasta to the soup and toss gently to coat. Stir in fresh chopped basil. Serve immediately in wide bowls, topped with extra Parmesan if desired.

Notes

[‘Do not boil the soup after adding the ricotta mixture to prevent curdling.’, ‘Cook pasta separately to prevent it from becoming mushy and absorbing too much liquid.’, ‘For a lighter version, use ground turkey or chicken and low-fat ricotta.’, ‘For a vegetarian option, skip the meat and add extra mushrooms or spinach.’, ‘Freeze the soup base without the pasta for best texture upon reheating.’]
