  • 1 pound ground breakfast sausage
  • 8 large eggs, room temperature
  • 1 cup milk or heavy cream

  • 1 teaspoon onion powder
  • 2 tablespoons chopped fresh chives or green onions (optional)
  • 1 tablespoon butter or oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat 1 tablespoon of butter or oil in a large skillet over medium heat. Add 1 pound of ground breakfast sausage, breaking it apart with a spatula. Cook until browned and cooked through, about 7-9 minutes. Drain excess fat if necessary and set aside.
  3. Arrange the 32 ounces of frozen tater tots evenly in the bottom of a 9×13-inch baking dish. No need to thaw.
  4. Spread the cooked sausage evenly over the tater tots.
  5. In a large mixing bowl, whisk together 8 large eggs, 1 cup of milk or heavy cream, 1 teaspoon garlic powder, 1 teaspoon onion powder, salt, and black pepper to taste until fully combined and frothy.
  6. Carefully pour the egg mixture evenly over the sausage and tater tots, letting it seep in between the layers.
  7. Sprinkle 2 cups of shredded cheddar cheese evenly over the casserole.
  8. Bake uncovered for 45-50 minutes, or until the eggs are set and the cheese is golden and bubbly. A knife inserted in the center should come out clean.
  9. Let the casserole cool for about 5 minutes before sprinkling chopped fresh chives or green onions on top. Serve warm.

Do not skip browning the sausage for best flavor. Use room temperature eggs for a smoother custard texture. Keep tater tots frozen until baking to ensure crispiness.
