  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup reduced apple cider
  • 1/4 cup vegetable oil
  • 2 medium Granny Smith apples, peeled and finely diced
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 cup confectioners’ sugar
  • 12 tbsp reduced apple cider (for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Pour 2 cups of apple cider into a saucepan. Bring to a boil over medium-high heat, then reduce to low. Simmer for 20-25 minutes until it reduces to 1/2 cup. Let cool completely.
  2. Preheat oven to 350°F (175°C). Generously grease a Bundt pan with butter or non-stick spray and dust with flour, tapping out excess.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.
  4. In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
  5. Beat in eggs one at a time, then add vanilla extract. Scrape down the sides of the bowl.
  6. Add dry ingredients to the butter mixture in three parts, alternating with reduced cider in two parts. Begin and end with dry ingredients. Mix on low until just combined.
  7. Gently fold in diced apples using a spatula.
  8. Pour batter into prepared pan. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cover with foil if top browns too quickly.
  9. Cool in pan for 10 minutes, then invert onto a cooling rack. Cool completely.
  10. Whisk confectioners’ sugar, 1 tbsp reduced cider, and a pinch of salt to make glaze. Adjust consistency with more cider if needed.
  11. Drizzle glaze over cooled cake. Let set for 10 minutes before slicing.

Notes

Reducing the cider is critical to prevent a soggy cake. Ensure ingredients are at room temperature for best texture. Do not overmix the batter. If using a tube pan instead of a Bundt pan, baking time may vary slightly.
