A classic pumpkin pie featuring a shatteringly flaky, 100% butter crust and a smooth, spiced custard filling. This recipe is designed to be quick, easy, and perfect for fall gatherings.

Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, very cold and cubed
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 6–8 tablespoons ice water
  • 1 can (15 oz) pure pumpkin puree
  • 1 can (12 oz) evaporated milk
  • 3 large eggs plus 1 egg yolk
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Instructions

  1. In a large bowl, whisk together flour, salt, and sugar. Cut in cold butter until mixture resembles coarse crumbs with pea-sized butter pieces.
  2. Sprinkle 6 tablespoons of ice water over the mixture and gently mix until dough starts to clump. Divide into two disks, wrap in plastic, and refrigerate for at least 1 hour.
  3. Preheat oven to 425°F (220°C). Roll out one dough disk into a 12-inch circle and place into a 9-inch pie dish. Trim edges and refrigerate while making filling.
  4. Whisk eggs and yolk until smooth. Add sugars, spices, and salt, then whisk in pumpkin puree. Slowly pour in evaporated milk while whisking until smooth.
  5. Pour filling into the chilled crust. Place pie dish on a baking sheet and bake at 425°F for 15 minutes.
  6. Reduce oven temperature to 350°F (175°C) and bake for another 40-45 minutes until edges are set and center jiggles slightly.
  7. Cool completely on a wire rack for at least 2 hours before slicing to allow custard to set.

Notes

Keep butter and water ice-cold to ensure a flaky crust. Do not overwork the dough. The pie must cool completely to set properly. For a crispier bottom, bake on a preheated baking sheet. Crust can be frozen for up to 3 months.
