A simple, reliable rescue meal featuring ground beef and a sticky brown sugar glaze. This easy dinner comes together quickly with minimal ingredients for maximum comfort.

Ingredients

Scale
  • 2 pounds ground beef (80/20 blend)
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon water or apple cider vinegar (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper or aluminum foil.
  3. In a large mixing bowl, combine ground beef, eggs, milk, breadcrumbs, salt, pepper, diced onion, minced garlic, and Worcestershire sauce.
  4. Mix gently by hand until just combined; avoid overmixing to prevent tough texture.
  5. Form the mixture into a loaf shape on the prepared baking sheet.
  6. Bake for 20 minutes.
  7. While baking, mix brown sugar with water or apple cider vinegar to form a thick paste.
  8. Remove loaf from oven and brush or pour the glaze evenly over the top.
  9. Return to oven and bake for another 20-25 minutes, until internal temperature reaches 160°F (71°C) and glaze is caramelized.
  10. Remove from oven and let rest for 10 minutes before slicing.

Notes

Use 80/20 ground beef for best moisture. Let the meatloaf rest for 10 minutes to redistribute juices. If the glaze burns, cover with foil for the last 10 minutes. Can be frozen uncooked or cooked.
