A quick and easy 3-ingredient buffalo chicken dip using rotisserie chicken, perfect for parties and game day gatherings. Creamy, spicy, and crowd-pleasing with minimal prep.

  • 2 cups shredded rotisserie chicken (about 300 grams)
  • 1/2 cup buffalo sauce (120 ml)
  • 8 ounces cream cheese, softened (225 grams)
  • Optional: 1/2 cup shredded cheddar or mozzarella cheese
  • Optional: 2 tablespoons ranch or blue cheese dressing
  • Optional: Chopped green onions or fresh parsley for garnish

Instructions

  1. Shred the rotisserie chicken into bite-sized pieces using two forks, removing skin and bones.
  2. Soften the cream cheese by leaving it at room temperature for 15 minutes or microwaving for 20 seconds.
  3. In a medium mixing bowl, combine the softened cream cheese and buffalo sauce. Stir until smooth and uniform.
  4. Fold the shredded chicken into the buffalo cream cheese mixture until evenly distributed.
  5. If desired, stir in shredded cheese or ranch/blue cheese dressing for extra creaminess.
  6. Transfer the mixture to an 8×8 inch (20×20 cm) baking dish or oven-safe skillet and smooth the top.
  7. Bake in a preheated oven at 350°F (175°C) for 20 minutes until bubbly and warmed through. Alternatively, microwave on high for 3-4 minutes, stirring halfway.
  8. Garnish with chopped green onions, parsley, or extra cheese before serving.
  9. Serve warm with celery sticks, tortilla chips, or gluten-free cornbread muffins.

Notes

Use softened cream cheese to avoid lumps. Remove skin and bones from chicken for best texture. Adjust buffalo sauce heat to taste. If dip is too thick after baking, add a splash of milk or cream to loosen. Can be made ahead and reheated. Freeze leftovers up to 2 months.
