Ingredients

Scale
  • 8 ounces cream cheese, softened to room temperature
  • 2 tablespoons milk
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh spinach, finely chopped
  • 1/4 cup finely chopped red bell pepper (optional)
  • 2 tablespoons finely chopped green onion
  • 8 slices deli turkey breast
  • 4 large flour tortillas (10-inch size)

Instructions

  1. Make the cream cheese filling: In a medium bowl, add the softened cream cheese, milk, garlic powder, salt, and pepper. Beat with a hand mixer on medium speed for about 2 minutes, until smooth, fluffy, and lump-free. Scrape down the sides of the bowl halfway through.
  2. Add the vegetables: Fold in the finely chopped spinach, red bell pepper (if using), and green onion. Stir gently with a spatula until evenly distributed. Taste and adjust seasoning if needed.
  3. Prepare your tortillas: Lay one tortilla flat on a cutting board. Spread about 3 tablespoons of the cream cheese mixture evenly over the entire surface, leaving about a 1/2-inch border around the edges.
  4. Layer the turkey: Place 2 slices of deli turkey over the cream cheese, overlapping slightly to cover the surface. Press down gently so the turkey sticks.
  5. Roll it up tight: Starting at one edge, roll the tortilla as tightly as possible without tearing. Use your fingers to keep the filling tucked in. Roll all the way to the end, then press gently to seal.
  6. Wrap and chill: Place the rolled tortilla seam-side down on a piece of plastic wrap. Wrap tightly, twisting the ends like a candy wrapper. Repeat with remaining tortillas. Refrigerate for at least 1 hour (2 hours is better).
  7. Slice and serve: When ready to serve, unwrap each roll and place on a cutting board. Using a sharp chef’s knife, trim off the very ends (about 1/4 inch from each side). Slice the roll into 1-inch pinwheels. Wipe the knife clean between cuts for neat slices.
  8. Arrange and enjoy: Place the pinwheels on a serving platter, spiral-side up. Serve chilled or at room temperature.

Notes

Let cream cheese sit out for at least 30 minutes before starting. Do not overfill tortillas (about 3 tablespoons each). Chilling is non-negotiable for clean slices. Use a serrated knife for best results. Wipe knife between cuts. Make ahead up to 24 hours. Store in refrigerator for up to 3 days. Do not freeze.
