Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with liners.
  2. In a medium bowl, whisk together 1 ½ cups flour, baking soda, baking powder, pumpkin pie spice, and salt. Set aside.
  3. In a large bowl, whisk melted butter, brown sugar, granulated sugar, eggs, and sour cream until smooth and emulsified.
  4. Stir in the pumpkin puree until fully incorporated.
  5. Add the dry ingredients to the wet ingredients and gently fold with a spatula until just combined; do not overmix.
  6. In a small bowl, combine streusel ingredients (½ cup flour, ¼ cup brown sugar, ¼ tsp cinnamon, and 2 tbsp cold butter). Rub butter into mixture with fingers until it resembles coarse crumbs.
  7. Divide batter evenly among muffin cups, filling each about ¾ full.
