This Best Black Cat Halloween Cookie Cake is a soft, chewy chocolate chip cookie cake shaped like a black cat. It’s an easy, last-minute Halloween dessert that requires no fancy decorating skills and is perfect for parties or a fun night in.

  • ½ cup (100g) granulated sugar
  • ¾ cup (150g) light brown sugar, packed
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 2 tablespoons (16g) cornstarch
  • ½ cup (50g) unsweetened cocoa powder (Dutch-process preferred)
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 cup (175g) semi-sweet chocolate chips
  • White chocolate chips or candy eyes (for decoration)
  • Extra dough (reserve ¼ cup for ears and tail)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat softened butter, granulated sugar, and brown sugar together on medium speed until light and fluffy, about 3-4 minutes. Scrape down the sides once.
  3. Add the egg and vanilla extract. Beat on low speed until just combined. The mixture may look slightly curdled.
  4. In a separate bowl, whisk together flour, cornstarch, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  6. Fold in the chocolate chips with a rubber spatula. Reserve about ¼ cup of plain dough (without chips) for the cat details.
  7. Transfer the dough to the prepared baking sheet. Shape into a rough circle about 8 inches in diameter and ½ inch thick. Use the reserved plain dough to form two pointed ears and a curved tail, pressing them gently onto the main body.
  8. Bake at 350°F (175°C) for 18-22 minutes. For a softer center, bake 18 minutes; for firmer, bake 22 minutes. The edges should be set and slightly cracked, the center soft and puffy.
  9. Let the cookie cake cool on the baking sheet for 10 minutes, then transfer to a cooling rack. Cool completely before decorating.
  10. Once cool, press two white chocolate chips into the dough for eyes. For pupils, melt a few dark chocolate chips and use a toothpick to dot the center of each white chip. Optionally, draw a mouth with melted chocolate.

Notes

For a thicker, softer center, chill the shaped dough for 30 minutes before baking. Start checking for doneness at 18 minutes to avoid overbaking. Let the cookie cake cool completely before adding decorations to prevent melting. The flavor improves after a day.
