A rich, fudgy brownie loaded with colorful candy-coated chocolate pieces, perfect for nostalgic comfort and crowd-pleasing treats.

Ingredients

Scale
  • ½ cup (115g) unsalted butter, melted
  • 1 cup (175g) semi-sweet chocolate chips
  • 1 cup (200g) granulated sugar
  • ½ cup (110g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ¾ cup (95g) all-purpose flour (can swap for almond flour for gluten-free)
  • ¼ cup (25g) unsweetened cocoa powder, sifted
  • ½ teaspoon salt
  • 1 teaspoon espresso powder (optional)
  • 1 cup (175g) colorful candy-coated chocolate pieces

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving a small overhang on the sides for easy removal later.
  2. Melt the butter and semi-sweet chocolate chips together in a microwave-safe bowl in 30-second bursts, stirring between each, until smooth and glossy. Alternatively, use a double boiler on the stovetop.
  3. In a large bowl, whisk granulated sugar, brown sugar, and eggs vigorously until thick, slightly pale, and glossy. Add vanilla extract and espresso powder, mixing well.
  4. Pour the chocolate-butter mixture into the sugar-egg mix and stir gently. In a separate bowl, sift together flour, cocoa powder, and salt, then fold them into the wet ingredients in batches until just combined. Avoid overmixing.
  5. Pour batter into the prepared pan and spread evenly with a spatula. Sprinkle the candy-coated chocolate pieces generously on top, pressing lightly so they stick.
  6. Bake for 25-30 minutes. Check at 25 minutes; edges should be set but the center still slightly soft when you gently jiggle the pan.
  7. Let brownies cool completely on a wire rack before slicing into squares and serving.

Notes

Do not overmix the batter to keep brownies fudgy. Use room temperature eggs for better texture. Melting butter and chocolate together creates a glossy, rich base. Check brownies at 25 minutes to avoid overbaking. Let brownies cool completely before slicing for clean squares. For less fudgy brownies, add a pinch more flour and bake 3-5 minutes longer. Espresso powder enhances chocolate flavor without coffee taste.
