  • 2 cans refrigerated biscuit dough (Pillsbury flaky layers recommended)
  • 1 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon
  • 1 cup packed brown sugar (dark brown sugar preferred)
  • 1/2 cup unsalted butter (1 stick), melted
  • 1/4 cup honey or light corn syrup
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped pecans or walnuts
  • Optional: 1/2 cup raisins or dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your Bundt pan generously with butter or non-stick spray.
  2. In a large bowl, mix 1 cup granulated sugar with 1 tablespoon ground cinnamon. Set aside.
  3. Open the two cans of refrigerated biscuit dough and separate each biscuit into quarters (about 16 pieces total).
  4. Roll each biscuit piece in the cinnamon sugar mixture until fully coated.
  5. In a separate bowl, whisk together 1 cup packed brown sugar, 1/2 cup melted unsalted butter, 1/4 cup honey or light corn syrup, and 1 teaspoon vanilla extract until smooth and glossy.
  6. Pour a bit of the sticky glaze into the bottom of the Bundt pan, then add a layer of coated dough balls. Sprinkle optional pecans or raisins between layers if using. Repeat layering until all dough balls are used, finishing with the glaze poured over the top.
  7. Place the Bundt pan in the preheated oven and bake for 35–40 minutes, or until the top is golden brown and the glaze is bubbling.
  8. Let the monkey bread cool in the pan for 10 minutes, then carefully invert onto a serving plate.
  9. Serve warm. Reheat leftovers gently in the oven or microwave.

Notes

If the top browns too quickly but the center is not done, tent the pan loosely with foil halfway through baking. Use room temperature butter for the glaze to ensure smooth mixing. Let the bread cool slightly before inverting to prevent sticking. Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days. Freeze wrapped tightly for up to 3 months.
