Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Pat dry the beef chunks, then season with salt and pepper. Brown the beef on all sides, about 3-4 minutes per side. Transfer browned beef to the slow cooker.
  2. In the same skillet, add chopped onion and minced garlic. Cook for 2-3 minutes until fragrant and translucent. Add tomato paste and cook for another minute, stirring constantly.
  3. Pour about 1/2 cup beef broth into the skillet to deglaze, scraping up brown bits. Pour this mixture into the slow cooker over the beef.
  4. Add the remaining 3 1/2 cups beef broth and Worcestershire sauce to the slow cooker. Stir gently to combine. Cook on LOW for 7-8 hours or HIGH for 4-5 hours until beef is fork-tender.
  5. About 30 minutes before serving, whisk together flour with 1/2 cup cold water until smooth. Pour slurry into the slow cooker and stir well to thicken the sauce.
  6. Nestle the egg noodles into the sauce, pushing them gently into the liquid. Cover and cook on HIGH for 20-30 minutes until noodles are tender but not mushy. Stir occasionally to prevent sticking.
  7. Taste and adjust seasoning with salt and pepper. Garnish with chopped parsley if desired. Serve hot.
