Quick and easy steak bites seared to perfection and coated in a rich garlic herb butter, perfect for weeknight dinners or crowd-pleasing appetizers.

  • 8 ounces (225 g) sirloin steak, cut into 1-inch cubes
  • 3 tablespoons unsalted butter, softened
  • 4 garlic cloves, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil (for searing)

Instructions

  1. Pat the sirloin cubes dry with paper towels. Season generously with salt and pepper and let sit for 5 minutes.
  2. In a small bowl, mix softened butter with minced garlic, chopped parsley, and thyme until well combined. Set aside.
  3. Heat a heavy skillet over medium-high heat and add olive oil. Wait until the oil shimmers but isn’t smoking.
  4. Add steak cubes in a single layer without overcrowding the pan. Sear for 2-3 minutes per side for medium-rare (135°F / 57°C) or longer if preferred.
  5. Lower heat to medium, spoon garlic herb butter over steak bites, and toss gently to coat. Cook for another minute until butter melts and infuses the meat.
  6. Remove steak bites from pan and let rest for a couple of minutes before serving.

Notes

Patting the steak dry is essential for a good sear. Avoid overcrowding the pan to prevent steaming. Add garlic butter towards the end to prevent burning the garlic. Rest steak bites before serving to lock in juices. For dairy-free, substitute butter with ghee or coconut oil.
