Perfect Prosciutto-Wrapped Dates with Creamy Goat Cheese

Sweet, sticky dates stuffed with creamy goat cheese and wrapped in crispy prosciutto, baked to perfection for a quick and elegant appetizer.

Ingredients

  • Medjool dates, pitted (large, plump)
  • Prosciutto, thinly sliced (recommend Prosciutto di Parma)
  • Goat cheese, creamy (room temperature)
  • Toothpicks (for securing prosciutto)
  • Olive oil (optional, for brushing)
  • Fresh herbs like thyme or rosemary (optional, for garnish)
  • Black pepper, freshly ground (a pinch)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. If dates are not pitted, carefully slice one side open and remove the pit, keeping the date mostly intact.
  3. Stuff each date with about 1 teaspoon (5 grams) of creamy goat cheese. Optionally mix in freshly ground black pepper or finely chopped fresh thyme into the goat cheese before stuffing.
  4. Cut prosciutto slices in half lengthwise if large. Wrap one half slice snugly around each stuffed date and secure with a toothpick.
  5. Place wrapped dates seam side down on the prepared baking sheet. Optionally brush lightly with olive oil for extra crispness.
  6. Bake for 12-15 minutes until prosciutto is crispy and slightly browned, and goat cheese is melted.
  7. Remove from oven and let cool for about 5 minutes to allow cheese to set.
  8. Transfer to a serving platter and garnish with fresh herbs or a drizzle of honey if desired.

Notes

If goat cheese is too firm, warm it in the microwave for 10-15 seconds to soften. Watch oven carefully to avoid burning prosciutto. For best results, bake on middle rack and rotate baking sheet halfway if oven runs hot. Let dates rest after baking to avoid burning mouth on molten cheese.
