  • 1/2 cup (120 ml) elderberry syrup (preferably homemade or high-quality store-bought)
  • 23 tablespoons (3045 ml) honey (or maple syrup/agave/stevia for vegan or low sugar options)
  • 4 cups (1 quart) filtered or spring water (still or sparkling)
  • 1-inch piece fresh ginger, peeled and finely grated (optional, about 1 teaspoon)
  • Ice cubes for serving

Instructions

  1. Roll 3-4 lemons firmly on the counter to loosen juices. Cut in half and use a citrus juicer to extract about 3/4 cup (180 ml) of fresh lemon juice. Remove any seeds.
  2. If using ginger, peel and finely grate a 1-inch piece to yield about 1 teaspoon. Set aside.
  3. In a mixing pitcher, combine 1/2 cup (120 ml) elderberry syrup with 2-3 tablespoons (30-45 ml) honey. Stir gently until the honey dissolves.
  4. Add the fresh lemon juice to the pitcher, then pour in 4 cups (1 quart) of cold water (still or sparkling). Stir well to blend all flavors.
  5. Add the grated ginger to the pitcher and stir. For a smoother drink, strain the mixture through a fine mesh sieve to remove ginger bits.
  6. Add ice cubes to glasses or the pitcher. Taste and adjust sweetness by adding more honey or lemon juice if desired. Serve immediately or refrigerate up to 24 hours.

Notes

Roll lemons before juicing to maximize juice yield. Warm honey slightly if too thick to dissolve faster. Adjust elderberry syrup amount to taste, especially if homemade and concentrated. Strain ginger for a smoother drink if preferred. Use sparkling water for a fizzy version and serve immediately to preserve bubbles. Store leftover lemonade in the refrigerator up to 24 hours and stir before serving.
