Easy Slow Cooker Honey Sesame Chicken

A quick and easy slow cooker recipe featuring tender chicken thighs coated in a sweet and tangy honey sesame glaze, perfect for busy weeknights and comforting family meals.

  • 2 pounds boneless, skinless chicken thighs
  • 1/2 cup honey
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 3 garlic cloves, minced
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 2 tablespoons toasted sesame seeds
  • 2 green onions, thinly sliced
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat chicken thighs dry with paper towels and place evenly in the slow cooker.
  2. In a mixing bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and sesame oil until smooth.
  3. Pour the sauce over the chicken, coating all pieces well.
  4. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours until chicken is tender and cooked through (internal temperature 165°F).
  5. About 30 minutes before serving, mix cornstarch with cold water until smooth to make a slurry.
  6. Pour the slurry into the slow cooker and stir gently to combine.
  7. Cook uncovered on HIGH for another 20-30 minutes until the sauce thickens and becomes glossy.
  8. Sprinkle toasted sesame seeds and sliced green onions over the chicken before serving.

Notes

Use chicken thighs for juicier meat; breasts can dry out if overcooked. Add cornstarch slurry gradually if sauce isn’t thickening enough. Optional red pepper flakes add heat. Vegetables like broccoli or snap peas can be added in the last hour of cooking. Can be made in an Instant Pot on high pressure for 10 minutes with natural release.
