  • 1/2 cup chopped green onions

  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder

  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley or chives (optional, for garnish)

Instructions

  1. Cube about 6 cups of day-old bread into roughly 1-inch pieces and spread evenly in a 9×13-inch casserole dish.
  2. Cook sausage or bacon until browned and crisp, drain excess fat, and sprinkle over the bread cubes.
  3. Dice bell peppers and slice green onions; scatter over the bread and meat layer.
  4. In a large bowl, whisk 8 large eggs, 2 cups whole milk, 1 tsp Dijon mustard, garlic powder, salt, and black pepper until fully blended and slightly frothy.
  5. Stir in 1 cup shredded cheddar and 1 cup shredded mozzarella cheese into the custard mixture, reserving a small handful for topping.
  6. Pour the egg and cheese mixture evenly over the bread, meat, and veggies; press down gently to help bread soak up the custard.
  7. Cover the casserole tightly with plastic wrap or foil and refrigerate for at least 6 hours or overnight.
  8. Preheat oven to 350°F (175°C). Remove cover, sprinkle reserved cheese on top, and bake uncovered for 45-50 minutes until puffed and golden brown and a knife inserted comes out clean.
