  • 1/4 cup low sodium chicken broth
  • A handful of fresh cilantro, chopped (optional)
  • Flour or corn tortillas, warmed, for serving

Instructions

  1. Slice the bell peppers and onion into thin strips. Mince the garlic cloves and set aside.
  2. In a small bowl, combine chili powder, cumin, paprika, oregano, salt, and black pepper. Stir well.
  3. Place the chicken breasts in a mixing bowl. Drizzle with olive oil and sprinkle the seasoning mix over them. Toss well to coat all sides evenly.
  4. Lay the seasoned chicken breasts at the bottom of the crockpot. Top with the sliced onions, bell peppers, and minced garlic. Pour the chicken broth over everything.
  5. Cover and cook on low for 4 to 5 hours or on high for 2.5 to 3 hours, until the chicken reaches an internal temperature of 165°F (74°C) and the veggies are tender.
  6. Use two forks or tongs to shred the chicken directly in the crockpot, mixing it with the cooked veggies and juices.
  7. Squeeze fresh lime juice over the shredded chicken and veggie mixture. Stir gently and sprinkle chopped cilantro on top if using.
