  • ½ teaspoon garlic powder (optional)

  • Zest from half a lemon (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the carrots and parsnips into evenly sized sticks, about 3 to 4 inches long and ½ inch thick.
  3. In a medium bowl, whisk together honey, olive oil, salt, black pepper, and garlic powder if using. Add fresh thyme or rosemary sprigs if desired.
  4. Add the carrot and parsnip sticks into the bowl and stir gently to coat everything evenly with the honey glaze.
  5. Spread the vegetables in a single layer on a rimmed sheet pan, leaving space between pieces.
  6. Roast for 20 minutes, flipping the vegetables halfway through at the 10-minute mark.
  7. Check for doneness; the vegetables should be tender and caramelized at the edges. Roast an additional 5 minutes if needed.
  8. Once out of the oven, sprinkle lemon zest over the veggies for a fresh finish.
  9. Serve warm immediately.
