A quick and refreshing gluten-free dessert featuring layers of fresh strawberries, blueberries, creamy coconut yogurt, and crunchy gluten-free granola. Perfect for summer gatherings and light enough for breakfast or dessert.

  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries, rinsed and drained
  • 1 cup coconut yogurt (plain or vanilla-flavored)
  • 1 teaspoon vanilla extract
  • 12 tablespoons honey or maple syrup (optional, adjust to taste)
  • 1/2 cup gluten-free granola (choose crunchy variety with nuts and seeds)
  • Pinch of lemon zest (optional)

Instructions

  1. Rinse strawberries and blueberries under cold water. Hull and slice the strawberries into thin pieces. Drain any excess water to keep parfaits from getting watery.
  2. In a mixing bowl, combine 1 cup of coconut yogurt with 1 teaspoon vanilla extract and 1-2 tablespoons honey or maple syrup. Stir gently until smooth and creamy.
  3. Start with a spoonful of strawberries at the bottom of each glass, followed by a layer of sweetened yogurt (about 2 tablespoons). Next, add a layer of gluten-free granola (about 1 tablespoon).
  4. Repeat layering with blueberries, yogurt, and granola until the glasses are nearly full, finishing with berries on top.
  5. Sprinkle a pinch of lemon zest over the top layer of berries to brighten flavors.
  6. Serve immediately for best crunch or chill for 15-20 minutes to let flavors meld slightly. Avoid chilling too long to keep granola crunchy.

Notes

Add granola just before serving to keep it crunchy. Use fresh berries for best texture; frozen berries can be used if thawed and drained well. For a richer yogurt layer, stir in cream cheese or mascarpone. You can swap granola for chopped nuts or gluten-free oats for different textures. Lemon zest brightens the flavor but is optional.
