  • 2 tablespoons (25g) granulated sugar
  • 1 cup (240ml) heavy whipping cream, cold
  • 1 teaspoon vanilla extract
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Macerate the Strawberries (5 minutes): In a medium bowl, combine the chopped strawberries with the granulated sugar and lemon juice. Stir gently and let them sit at room temperature for about 5 minutes until the berries release their juices and soften slightly.
  2. Whip the Cream (5-7 minutes): Pour the cold heavy whipping cream into a chilled mixing bowl. Add the vanilla extract. Using an electric mixer or whisk, beat the cream until soft peaks form.
  3. Combine Strawberries and Cream (2-3 minutes): Gently fold half of the macerated strawberries (with their juices) into the whipped cream using a spatula. Then fold in the remaining strawberries carefully.
  4. Chill (Optional, 30 minutes): You can enjoy the mousse immediately for a soft texture, or cover and chill in the fridge for about 30 minutes to let it firm up slightly.
  5. Serve: Spoon the mousse into serving glasses or bowls. Garnish with a fresh strawberry or a mint leaf if desired. Serve right away or keep chilled until ready.

Use very cold cream and chilled bowls for best whipping results. Do not overbeat the cream to avoid grainy texture. Fold gently to keep mousse airy. Fresh ripe strawberries improve flavor.
