These decadent red wine chocolate truffles combine rich dark chocolate with full-bodied red wine for a smooth, luxurious treat that’s quick and easy to make.

  • 8 oz (225 g) dark chocolate (bittersweet or semisweet)
  • 1/2 cup (120 ml) heavy cream
  • 1/4 cup (60 ml) red wine (Merlot or Cabernet Sauvignon recommended)
  • 2 tbsp (28 g) unsalted butter, softened
  • 1 tsp vanilla extract
  • Dutch-processed cocoa powder (for dusting)
  • Optional: sea salt flakes (a pinch for topping)

Instructions

  1. Finely chop 8 oz (225 g) of dark chocolate and place it in a heatproof bowl.
  2. In a small saucepan, gently warm 1/2 cup (120 ml) heavy cream and 1/4 cup (60 ml) red wine over medium heat until hot but not boiling (3-5 minutes).
  3. Pour the hot cream and wine mixture over the chopped chocolate and let sit for 1 minute to soften.
  4. Gently stir the mixture with a whisk or spatula until smooth and glossy. Add 2 tbsp (28 g) softened unsalted butter and 1 tsp vanilla extract, stirring until fully incorporated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 2 hours until firm enough to handle.
  6. Line a baking sheet with parchment paper. Using a spoon or melon baller, scoop out small portions of ganache (about 1 tbsp or 15 ml each) and quickly roll between palms to form smooth balls.
  7. Roll each truffle in Dutch-processed cocoa powder until fully coated. Optionally, sprinkle a pinch of sea salt flakes on top.
  8. Return the truffles to the fridge for 30 minutes to set before serving.

Notes

Chop chocolate finely to avoid burning. Heat cream and wine gently without boiling to preserve flavor. Chill ganache fully before shaping for best texture. Use Dutch-processed cocoa powder for dusting for smoother flavor. Keep hands cool while shaping to prevent melting.
