  • 1 ½ cups panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a medium saucepan, melt 4 tablespoons unsalted butter over medium heat. Whisk in 3 tablespoons all-purpose flour and cook for 1-2 minutes until pale golden.
  3. Slowly whisk in 2 cups whole milk and ½ cup chicken broth, stirring constantly until sauce thickens and coats the back of a spoon, about 5-7 minutes.
  4. Stir in 1 teaspoon Dijon mustard, ½ teaspoon garlic powder, ½ teaspoon onion powder, salt, and pepper to taste. Remove from heat and fold in 1 ½ cups shredded Swiss cheese until melted and smooth.
  5. In a large mixing bowl, combine shredded chicken, diced ham, and creamy cheese sauce. Stir gently to coat evenly.
  6. Transfer mixture to prepared baking dish and spread evenly.
  7. In a small bowl, mix 1 ½ cups panko breadcrumbs, ½ cup grated Parmesan, and melted butter (reserve 1-2 tablespoons to drizzle if desired). Toss until crumbly and coated.
  8. Sprinkle breadcrumb mixture evenly over casserole.
  9. Bake for 25-30 minutes until topping is golden brown and casserole is bubbling. Cover loosely with foil if topping browns too quickly.
  10. Let casserole rest for 5-10 minutes before serving. Garnish with chopped fresh parsley if desired.

Notes

Use whole milk and fresh shredded cheese for best creamy texture. For gluten-free, substitute flour and breadcrumbs with almond flour and gluten-free panko. Gruyère cheese can replace Swiss for a nuttier flavor. Avoid rushing the sauce step to prevent lumps. Let casserole rest before serving to set properly. Use rotisserie chicken to save prep time.
