  • 8 large eggs, room temperature
  • 2 cups (200 g) sharp cheddar cheese, shredded
  • 1 cup (240 ml) milk (whole or 2%)
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp salt, adjust to taste
  • 1/2 tsp black pepper, freshly ground if possible
  • 2 tbsp butter, melted
  • Optional add-ins: 1 cup (150 g) diced cooked bacon or ham, 1/4 cup (15 g) chopped green onions, 1/2 cup (75 g) diced bell peppers

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13 inch baking dish with butter or non-stick spray, coating all edges.
  3. Spread the frozen shredded hashbrowns evenly in the baking dish. Drizzle melted butter over the top and sprinkle with salt and pepper.
  4. Bake hashbrowns for about 15 minutes until edges start to crisp and turn golden.
  5. Meanwhile, in a large bowl, whisk together eggs and milk until fully combined and slightly frothy.
  6. Add onion powder, garlic powder, a pinch more salt, and black pepper to the egg mixture and stir.
  7. Stir 1 ½ cups (150 g) of shredded cheddar cheese into the egg mixture. Fold in any optional add-ins like cooked bacon, ham, or sautéed veggies.
  8. Remove hashbrowns from oven and carefully pour the egg and cheese mixture evenly over them. Use a spatula to spread evenly if needed.
  9. Sprinkle the remaining ½ cup (50 g) shredded cheddar cheese over the top.
  10. Return the dish to the oven and bake for an additional 20-25 minutes until eggs are fully set and the top is bubbly and browned.
  11. Let the bake rest for 5-10 minutes before slicing and serving.
