A crispy, cheesy quesadilla ring with melty cheese and toasted tortillas, perfect for potlucks, game days, or family gatherings. Easy to make and a crowd-pleaser with a gooey center and golden edges.

Ingredients

Scale
  • 8 large (10-inch) flour tortillas
  • 3 cups shredded cheese blend (sharp cheddar and Monterey Jack)
  • 4 oz softened cream cheese
  • 1 cup cooked shredded chicken (optional)
  • 2 finely chopped green onions
  • 1 small seeded and minced jalapeño (optional)
  • 1 tablespoon taco seasoning
  • 4 tablespoons melted butter
  • Sour cream (for serving, optional)
  • Salsa or guacamole (for dipping, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease or line a 10-inch round baking pan with parchment paper.
  2. In a medium bowl, combine shredded cheese, softened cream cheese, cooked shredded chicken (if using), chopped green onions, minced jalapeño, and taco seasoning. Mix until well combined.
  3. Lay out 4 tortillas flat on a clean surface. Brush each tortilla lightly with melted butter on one side. Place butter side down on the pan as base layers.
  4. Spread the cheese mixture evenly over the 4 tortillas, leaving about a 1-inch border around the edges.
  5. Place the remaining 4 tortillas over the filling. Brush the top side of these with melted butter and press down gently to seal the layers.
  6. Transfer the layered tortillas onto your baking pan, shaping them into a ring. Cut each tortilla into 6 wedges (like slicing a pizza) but keep the center intact.
  7. Carefully fold or twist each wedge outward to create ‘petals’ of the bloomin’ ring.
  8. Bake for 20-25 minutes until golden brown, bubbly cheese, and crispy edges. Check after 15 minutes to avoid overbrowning.
  9. Remove from oven and let rest for 5 minutes to help the cheese set.
  10. Slice the ring into wedges along the pre-cut lines and serve warm with sour cream, salsa, or guacamole.

Notes

Brush tortillas with melted butter for a golden, crispy crust. Use room temperature cream cheese for better blending. Press layers firmly before baking and let rest after baking to keep slices intact. Avoid microwaving leftovers to maintain crispiness; reheat in oven instead.
