  • 1/4 tsp black pepper
  • 2 large eggs, beaten
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 12 tsp Sriracha or hot sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp rice vinegar
  • 1 clove garlic, minced
  • Sliced green onions (for garnish)
  • Sesame seeds (for garnish)
  • Fresh cilantro (optional, for garnish)
  • About 2 cups vegetable or canola oil for frying

Instructions

  1. Cut chicken into bite-sized pieces and pat dry with paper towels.
  2. In a large bowl, mix flour, cornstarch, garlic powder, paprika, salt, and black pepper.
  3. In a separate bowl, beat the eggs until smooth.
  4. Dip each chicken piece into the beaten eggs, then dredge thoroughly in the flour mixture. Press lightly to adhere coating.
  5. Heat about 2 cups of oil in a skillet over medium-high heat to 350°F (175°C).
  6. Fry chicken pieces in batches for 4–5 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C).
  7. Remove chicken with a slotted spoon and drain on a wire rack over a baking sheet.
  8. While frying, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, rice vinegar, and minced garlic to make the sauce.
  9. Toss fried chicken gently in the spicy creamy sauce until evenly coated.
  10. Garnish with sliced green onions, sesame seeds, and fresh cilantro if desired. Serve immediately.

Notes

Pat chicken dry before coating for better adhesion. Maintain oil temperature at 350°F to avoid greasy or burnt coating. Fry in batches to prevent overcrowding. Toss chicken gently in sauce to keep coating crispy. Sauce can be adjusted for spice level. For gluten-free, substitute all-purpose flour with almond flour.
