Instructions

  1. Peel and cut 2 medium sweet potatoes into 1/4-inch thick fries, about 3-4 inches long, keeping them uniform for even cooking (about 10 minutes).
  2. Pat the cut fries dry with a clean kitchen towel or paper towels to remove excess moisture (2-3 minutes).
  3. Place the fries in a large mixing bowl. Sprinkle 2 tablespoons of cornstarch evenly over the fries and toss well until all fries have a light coating.
  4. Drizzle 1-2 tablespoons of olive oil over the fries. Sprinkle with 1 teaspoon sea salt, 1/2 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/4 teaspoon freshly ground black pepper, and a pinch of cayenne if using. Toss again to coat evenly (about 2 minutes).
  5. Preheat your air fryer to 400°F (200°C) for 3-5 minutes.
  6. Place the fries in a single layer in the air fryer basket, avoiding overcrowding. Cook in batches if necessary.
  7. Air fry at 400°F (200°C) for 15-20 minutes, shaking the basket or flipping the fries every 5 minutes for even crisping. Check for doneness after 15 minutes and cook in 2-minute increments if needed.
