  • 1 pound Italian sausage, mild or spicy, casings removed
  • 4 medium russet potatoes (about 2 pounds), peeled and diced into 1-inch cubes
  • 1 large yellow onion, finely chopped
  • 3 large garlic cloves, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 6 cups low sodium chicken broth
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme (or 1 tablespoon fresh, finely chopped)
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat 2 tablespoons olive oil in a large heavy-bottomed pot over medium heat. Add the sausage, breaking it up with a wooden spoon. Cook until browned and cooked through, about 8 minutes.
  2. Add chopped onion, carrots, and celery to the pot. Sauté for 5-7 minutes until softened and fragrant. Stir in minced garlic and cook for another minute.
  3. Sprinkle 2 tablespoons flour over the sausage and veggies. Stir constantly for 2 minutes to cook out the raw flour taste.
  4. Slowly pour in 6 cups chicken broth while stirring to prevent lumps. Add diced potatoes, thyme, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat to low and simmer gently for 20-25 minutes, or until potatoes are tender.
  5. Stir in 1 cup heavy cream and warm through for 5 minutes without boiling. Taste and adjust seasoning as needed.
  6. Ladle soup into bowls and sprinkle with fresh parsley. Serve hot with crusty bread or a simple green salad.

Notes

For gluten-free, substitute flour with cornstarch or gluten-free flour. To avoid curdling, add cream off heat or on very low heat and do not boil after adding cream. If soup is too thick, add broth or water; if too thin, simmer uncovered to thicken. Browning sausage well is key for flavor.
