  • 5 oz (140 g) Boursin cheese, garlic and herb flavor
  • 34 cloves fresh garlic, minced
  • 2 tablespoons olive oil
  • 1 cup (240 ml) chicken or vegetable broth
  • 1/2 cup (120 ml) heavy cream or half-and-half
  • 1/4 cup (25 g) freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley or chives
  • Salt and pepper to taste
  • Optional: red pepper flakes, lemon zest

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add 12 oz (340 g) of pasta and cook according to package instructions until al dente, about 9-11 minutes. Reserve 1 cup (240 ml) of pasta water before draining.
  2. While pasta cooks, heat 2 tablespoons olive oil in a large skillet over medium heat. Add 3-4 minced garlic cloves and sauté for 1-2 minutes until fragrant but not browned.
  3. Pour in 1 cup (240 ml) chicken or vegetable broth, followed by 1/2 cup (120 ml) heavy cream or half-and-half. Stir and simmer gently for 3-4 minutes until slightly reduced.
  4. Lower heat to medium-low and add 5 oz (140 g) Boursin cheese. Stir continuously until cheese melts smoothly into the sauce, about 2-3 minutes. Add reserved pasta water if sauce is too thick.
  5. Add drained pasta to the skillet and toss gently to coat. Add more pasta water a tablespoon at a time if needed for creamy consistency.
  6. Stir in 1/4 cup (25 g) freshly grated Parmesan cheese and 2 tablespoons chopped fresh parsley or chives. Season with salt and freshly ground black pepper to taste.
  7. Serve immediately, optionally garnished with extra herbs or red pepper flakes.

Notes

Keep heat low when melting Boursin cheese to avoid curdling. Reserve pasta water to adjust sauce consistency. Use fresh garlic and herbs for best flavor. For vegetarian version, use vegetable broth. For dairy-free, substitute cream and cheese with vegan alternatives.
