  • 1 block feta cheese (about 7 oz / 200g), preferably full-fat
  • 2 cups cherry tomatoes (about 10.5 oz / 300g), fresh and ripe
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced or thinly sliced
  • 8 ounces dry pasta (penne, fusilli, or rigatoni recommended)
  • Salt and freshly ground black pepper, to taste
  • Optional: A handful of fresh basil leaves, torn for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the block of feta in the center of a medium-sized oven-safe baking dish (about 9×9 inches). Scatter the cherry tomatoes evenly around the feta.
  3. Sprinkle the minced garlic over the feta and tomatoes, then drizzle the olive oil all over.
  4. Season with a generous pinch of salt and freshly ground black pepper.
  5. Bake in the oven for about 30 minutes, or until the tomatoes have burst and the feta is soft and golden on top.
  6. While baking, boil a large pot of salted water and cook the pasta according to package instructions until al dente (usually 8-10 minutes). Drain the pasta, reserving about ½ cup (120 ml) of pasta water.
  7. Remove the baking dish from the oven. Mash the softened feta and tomatoes together into a creamy sauce using a fork or spoon. Add reserved pasta water as needed to loosen the sauce.
  8. Toss the cooked pasta into the sauce, stirring well to coat all noodles.
  9. Garnish with torn fresh basil leaves and serve immediately while warm.

Notes

Use full-fat feta for the creamiest sauce. Save some pasta water to adjust sauce consistency. If feta looks dry before baking, drizzle extra olive oil. You can toss pasta and sauce directly in the baking dish to reduce cleanup. Variations include adding red pepper flakes for heat, fresh greens for nutrition, or protein like chicken or shrimp.
