  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700g)
  • ½ cup (120 ml) balsamic vinegar
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 tablespoon chopped rosemary or thyme (optional)
  • Salt and pepper to taste
  • 2 medium carrots, peeled and cut into chunks
  • 1 red bell pepper, sliced
  • 1 small red onion, cut into wedges
  • 1 cup baby potatoes, halved
  • 1 cup green beans, trimmed (optional)
  • Fresh parsley chopped (optional garnish)

Instructions

  1. In a mixing bowl, whisk together ½ cup balsamic vinegar, 2 tablespoons honey, 3 minced garlic cloves, 1 tablespoon Dijon mustard, and 2 tablespoons olive oil. Add chopped rosemary or thyme if using. Season with salt and pepper to taste.
  2. Pat dry 4 boneless, skinless chicken breasts. Lightly season both sides with salt and pepper.
  3. Place the chicken breasts at the bottom of the slow cooker. Pour the balsamic sauce evenly over the chicken, coating each piece. Cover and cook on low for 4 to 5 hours, or until chicken reaches an internal temperature of 165°F (74°C).
  4. About 45 minutes before the chicken is done, preheat oven to 425°F (220°C). Toss carrots, red bell pepper, red onion, baby potatoes, and green beans (if using) with 1 tablespoon olive oil, salt, and pepper. Spread evenly on a baking sheet.
  5. Roast the vegetables in the oven for 30-40 minutes, turning once halfway through, until tender and caramelized at the edges.
  6. Serve the chicken topped with the roasted vegetables and a sprinkle of fresh parsley. If the sauce is too thin, remove chicken and cook sauce on high uncovered in the slow cooker for 15 minutes to thicken.

Notes

If sauce is too thin after cooking, remove chicken and cook sauce on high uncovered for 10-15 minutes to thicken. Roasting vegetables separately ensures caramelization and better texture. Season chicken well before slow cooking for best flavor. Can substitute chicken thighs for juicier meat and swap honey with maple syrup. Use seasonal vegetables as desired.
