  • 2 tablespoons Worcestershire sauce
  • 3 tablespoons all-purpose flour (or cornstarch for gluten-free)
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • Optional: 8 ounces mushrooms, sliced

Instructions

  1. Trim excess fat from the beef sirloin tips and cut into roughly 1.5-inch pieces. Pat dry with paper towels.
  2. Heat olive oil in a large skillet over medium-high heat. Sear beef in batches for about 2 minutes per side until browned. Transfer to a plate.
  3. In the same skillet, reduce heat to medium. Add butter and chopped onion; cook for 4-5 minutes until softened and translucent. Stir in minced garlic and cook for another minute.
  4. Sprinkle flour over the onion and garlic mixture, stirring constantly for 2 minutes. Gradually whisk in beef broth, scraping browned bits from the pan. Add Worcestershire sauce, balsamic vinegar, thyme, salt, and pepper. Simmer until thickened, about 3-4 minutes.
  5. Transfer seared beef and gravy mixture to slow cooker. Add mushrooms if using. Cover and cook on low for 6-7 hours or high for 3-4 hours until beef is fork-tender.
  6. About 15 minutes before serving, taste and adjust seasoning. If gravy is too thin, mix 1 teaspoon cornstarch with 2 teaspoons cold water and stir in to thicken.
  7. Serve beef tips and gravy over mashed potatoes, egg noodles, or crusty bread.

Notes

For more flavor, marinate beef tips in Worcestershire sauce and soy sauce for 30 minutes before searing. To keep it dairy-free, substitute butter with olive oil or non-dairy margarine. Use cornstarch instead of flour for gluten-free gravy. Avoid lifting the slow cooker lid frequently to maintain temperature. Let beef rest 5 minutes before serving to meld flavors.
