  • 1 cup M&M’s (classic or peanut)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or use a silicone baking mat.
  2. In a large mixing bowl, combine 1 cup creamy peanut butter, 1 cup granulated sugar, and 1 cup packed light brown sugar. Use an electric mixer on medium speed or a wooden spoon to blend until creamy and well combined, about 2-3 minutes.
  3. Crack in 2 large eggs (room temperature) and 1 teaspoon vanilla extract. Beat until the mixture is smooth and glossy, roughly 1-2 minutes.
  4. In a separate bowl, whisk together 1 ½ cups old-fashioned rolled oats, 1 teaspoon baking soda, and ½ teaspoon salt.
  5. Slowly fold the oat mixture into the wet peanut butter batter. Stir gently but thoroughly until you have a thick, sticky dough.
  6. Add 1 cup M&M’s, ½ cup mini chocolate chips, and ½ cup chopped nuts (if using). Stir carefully to evenly distribute the candy and nuts.
  7. Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough about 2 inches apart on the prepared baking sheet. Slightly press down each mound for even baking but do not flatten too much.
  8. Bake for 10-12 minutes until cookies look set around the edges but still soft in the center.
